Let's face it: nothing beats homemade pancakes. But sometimes we all need a little help. Since I moved across state lines last weekend, my new apartment has been in complete disarray.
So, after a quick grocery store trip I grabbed a box of Kodiak Buttermilk Flapjack & Waffle Mix. My mom used to swear by this stuff for a protein-filled breakfast, and it's always a safe bet that Grace will enjoy any pancake or waffle-based breakfast.
So on my second day of work in a new city, this box was a literal life saver. In 10-20 minutes, you have the perfect quick breakfast for work-from-home or on-the-go that's a step above a granola bar.

ANYWAYS, despite the recipe being on the box, here's how I fixed mine on a busy morning:
INGREDIENTS
3/4 c Water
Maple syrup (as desired)
Fresh fruit (optional, for topping)
Butter (optional, for topping)
RECIPE
1) Mix & cook batter per package instructions; to make it a bit sweeter, I added 2 tsp sugar per 1 cup Kodiak mix
2) Add your toppings! Since it's summertime, I added strawberries and butter.
3) Serve with maple syrup (or peanut butter for some extra protein)

And that's it! Play around with toppings, fruits, anything you like - the only limit is your imagination!
